1 Tablespoon Olive Oil
¼ Cup Onions, small dice
2 Bananas, medium dice (cut into halves, circles, wedges, etc)
2 Garlic Cloves, minced
2 Tablespoons Curry Powder (approx. 2 teaspoons each of coriander, cumin, turmeric, cinnamon)
½ Tablespoon Smoked Paprika
1 Teaspoon Chili Powder
2 Chicken Breasts (approx. 1 pound), medium dice
1 Tablespoon Lime Juice
¼ Cup Chicken Stock
Salt and Pepper to taste
In a saucepan over medium, heat olive oil and sauté the onions. Add the bananas, garlic, curry powder blend, paprika and chili powder. Cook ingredients over medium for approximately 4-5 minutes. Add the chicken and continue to cook for another 3 minutes, until the chicken is almost done. Finally add lime juice and stock and cook for another 3-5 minutes until the chicken is cooked and the sauce has thickened. Adjust seasonings as needed.
Garnish with parsley, cilantro or fried plantains.
