Today Hollie is making a delectable Lemon Garlic Chicken Salad, and Michael has a Riesling to showcase today from Paper Moon Vineyards in Vermilion, Ohio.

Hollie's Lemon Garlic Chicken Salad

For the Salad:


Boneless Chicken Breasts or Tenders

1 bag Baby Spinach

¼ cup Basil Leaves

1 Carrot

1 ½ cups Grape Tomatoes, sliced in half

1 tsp Dried Oregano

½ Red Bell Pepper

Red Onion Slices

2 tbsp Shallots


Cook chicken and slice.

Chop all ingredients and combine.

For the Dressing:


1 Lemon, peeled, halved

½ tsp Hot Sauce

1 clove Garlic

½ tsp Paprika

¼ tsp Ground Cumin

1 tsp Salt

1/3 cup Olive Oil


Place all ingredients except olive oil in a blender or food processor and blend until combined.

Slowly add olive oil until it reaches your desired consistency.

Adjust garlic, salt & spices to taste.
