Nutella Cookie Ice Cream Sandwiches

1 cup Nutella
½ cup Brown Sugar
2 Eggs
1 tbsp Vanilla Extract
1 tsp Baking Soda
¼ tsp Salt
1 cup All Purpose Flour
½ cup Chocolate Chips
¼ cup Soft Caramels, finely chopped
Parchment Paper

Combine Ice Cream & Wine to taste. Mix in blender. Be careful, adding too much wine will not freeze properly. Place in freezer.
Preheat oven to 350 degrees, and line 2 baking trays with parchment paper.
Combine Nutella & Brown Sugar in stand mixer using whisk attachment.
Add Eggs one at a time.
Mix in Vanilla, Baking Soda & Salt.
Gradually add flour.
Stir in Chocolate Chips, and add Caramels.
Using a spoon, scoop cookie dough onto the trays, leaving about 2 inches in between.
Bake for 10 minutes rotating trays halfway through cooking.
Top 1 Cookie with Ice Cream & Wine combination, and place another cookie on top.
Freeze until desired consistency.
