Thanksgiving dinner in a microwave?

Yep, you read that right!

Below are a couple of recipes tested out by our sister station in Houston, Texas.

MASHED POTATOES

Ingredients

2 1/2 lbs Yukon Gold Potatoes
6 tbs butter
2 minced garlic cloves (optional)
Dash of salt and pepper

Directions

Peel and dice potatoes.
Place in microwave safe bowl and cover.
Cook at HIGH for 9 to 10-1/2 minutes; stir once. Potatoes should be tender.
Combine and warm milk, butter, salt and pepper.
Drain potatoes and add milk mixture.
Mash until smooth.

CRANBERRY SAUCE

Ingredients

1 bag fresh cranberries
1 1/4 cups sugar
1/2 cup orange juice or water

Directions

Mix all the ingredients in a microwave-safe bowl.
Cover with wax paper.
Cook on high for 5 minutes.
Stir.
Cook another 5 to 7 minutes.
Transfer sauce to serving bowl and refrigerate for 2 to 3 hours.

STUFFING

Ingredients

8 cups bread crumbs
1/2 diced onion
1 cup diced celery
1/3 cup melted butter
2 – 3 cups chicken broth
1/2 tsp poultry seasoning
2 tsp salt
1 dash pepper

Directions

Mix all the ingredients in a microwave-safe bowl.
Microwave on HIGH for 5 – 7 minutes

TURKEY

Ingredients

1/2 turkey breast with skin and bone (about 3 lbs)
Dash salt
Dash pepper
4 tbs soft butter
Dash poultry seasoning
1 cup water

Directions

Remove the skin.
Season both sides with spices and butter – refrigerate 1 hour.
Place turkey in large microwave safe bowl, add water, cover with plastic wrap.
Microwave on HIGH for 5 minutes.
Reduce power to 50%, microwave for another 5 minutes.
Flip turkey over then cook at 50% power for an additional 10 – 13 minutes until an instant read thermometer reads 160 degrees F.
