Homemade with Hollie Recipe: Perfect Roast Chicken


2 pkg boneless chicken

1 pkg with bones (chicken wings)

2 sticks butter

Olive oil

2 cups flour

1 bunch fresh sage

1 bunch fresh thyme

1 bunch fresh parsley

1 carton chicken stock




Cut the boneless chicken breast into pieces. I usually cut each breast into 3. In a plastic shopping bag add a couple of cups of flour. Place chicken into bag with flour and shake coating chicken well. In a large skillet melt one stick of butter and a couple of tablespoons of olive oil. Heat on medium/medium high. Brown chicken, about five minutes per side. You're looking for a nice golden brown color. Once the chicken is browned transfer to a roaster. In the skillet you browned the chicken - add one and a half cups of chicken stock. Stir with a wooden spoon getting all the little bits up off of the bottom of the pan. Pour this over top of the chicken in the roaster. Give all of your herbs a rough chop. Top the chicken with the fresh herbs - reserving about a fourth of cup for garnish to serve. Bake the chicken covered at 350° for one hour. When finished baking sprinkle the additional fresh herbs overtop.
