Hollie's Mini Cheesecakes
2 cups Graham Cracker Crumbs (If you can't find the crumbs, you can ground 16 whole crackers)
2 tbsp Sugar
8 tbsp Butter, melted
32 oz Cream Cheese, room temperature
¾ cup Sugar
4 Eggs, room temperature
1 cup Sour Cream
1 tsp Vanilla
Zest of 1 Lemon
Fruit for Topping
Preheat oven to 325 degrees.
Spray jelly jars with non-stick baking spray.
Combine graham cracker crumbs, 2 tbsp sugar and melted butter in a bowl.
Put about 1 tbsp of the crumbs into each jelly jar, and push down to fill the glass.
Mix the cream cheese with ¾ cup sugar until smooth.
Add the eggs, one at a time, and mix well.
Add the sour cream, vanilla and lemon zest and mix well.
Put about 1/3 cup of the mixture into each jelly jar, leaving room for the topping.
Put the jars in a large roasting pan. Fill the pan with hot water halfway up the jars.
Bake for 30 minutes, and allow to cool.
Top with your favorite fruit.
