1) Tabouli ( a vegetarian, vegan, Middle Eastern Salad)
This recipe is great for families with their own little vegetable garden because almost everything in this salad can be picked, washed and chopped,fresh, right from your own garden.
-2 bunches of parsley washed,dried,chopped fine
-1 bunch of green onions washed,dried, chopped fine
-1/4 cup of fresh mint washed dried,chopped fine
-4-5 medium tomatoes washed dried and chopped fine
-1/2 cup bulghar wheat, wash,soak in cold water for about 1 hour drain ,press out and discard all water
mix all these prepped ingredients
-4-oz extra virgin olive oi
-juice from 2-3 lemons or (2 oz lemonjuice)
add dressing to prepped veggies add salt to taste mix by hand
wash and dry some baby romaine heart lettuce
place the prepped lettuce on a plate and fill with Tabouli and serve as appetizers
or serve on a plate with toasted pita chips.
