Tuscan Bread Salad
1 Loaf of ciabatta bread
1 bag of clipped spinach
2 cups olive oil
1 cup balsamic vinaigrette
1 cup diced fresh mozzarella
1 pint cherry tomatoes
1 cup sundried tomatoes
Salt & pepper to taste (TT)
1 cup banana pepper rings
1 cup fresh basil leaves
Take ciabatta bread and cut into 1" squares and toast off approximately 5 mins or until golden brown. Once bread is cool enough to touch, mix spinach, croutons, sundried tomatoes, basil, balsamic vinaigrette and oil together in large bowl. Drain pepper rings and mix with mixer. Cut cherry tomatoes in half and spread over top with diced fresh mozzarella. Salt & Pepper to taste
