Hollie's Bolognaise
Lots of fresh garlic, chopped (10 cloves if you're me!)
1 medium onion, chopped
5 medium ripe tomatoes, chopped
1 can of your favorite Italian style stewed tomatoes
1 tablespoon of tomato paste
1 pound of ground sirloin
1 cup chopped fresh basil
Olive oil
Salt, pepper
Parmesan cheese
1 pound of your favorite pasta, cooked al dente! (I used large rigatoni)
In a large skillet coated with olive oil sauté onion until tender. Add garlic and cook another 3 minutes until fragrant. Add ground sirloin, cook until meat is browned. Add fresh tomatoes, stewed tomatoes and tomato paste. Salt and pepper... Let simmer 45 minutes, stirring frequently. You will more than likely need to add some water through the process (a lot of times I'll use chicken stock) as the meat sauce cooks down--- Just eyeball it. Once the sauce has cooked 45 minutes, add the fresh basil. Toss the sauce and pasta together and top with a generous amount of parmesan cheese.
