Healthy Chicken Parmesan
Ingredients:
4 oz Chicken boneless skinless
1/8 cup 2% mozzarella cheese
2 slices of tomato
Salt and pepper to taste
1 tablespoon of olive oil
How to cook:
1. Preheat the broiler to high setting
2. Clean all the fat off the chicken breast and slice it 1/2 inch thick
3. Season with salt and pepper
4. Heat saute pan and add olive oil
5. Cook for about 3 minutes each side (leave the chicken in the pan)
6. Top with 1/4 cup tomato sauce
7. Slice tomato and add 2 slices to the top of the chicken
8. Add the second half of tomato sauce
9. Cover in mozzarella cheese
10. Place the pan in the oven and melt the cheese
