Spinach Salad with Goat Cheese Dressing
Serves 6
6 cups baby spinach
½ cup minced well cooked bacon
3 pears, cored, peeled and sliced
2 cup toasted croutons
1 cup toasted walnuts
Mix ingredients together in a large mixing bowl.
Goat Cheese Dressing:
¼ cup Sherry vinegar
¼ cup extra virgin olive oil
1 teaspoon minced roasted garlic cloves
2 teaspoons honey
½ teaspoon cinnamon
¼ cup goat cheese
2 teaspoons lemon juice
Salt and pepper to taste
Blend ingredients together in a food processor or blender. Adjust flavors to taste.
