Easter is this Sunday, and even though the Easter Bunny is really busy, you can have breakfast with him! Jason Gergon and Marion Coblentz, from Hartville Marketplace, are here to tell us about Breakfast with the Easter Bunny and are making a delicious Greek Tomato Salad.

Salad Ingredients:

Tomatoes (3-4 local varieties)
Cucumber (seedless preferable)
Red Onion
Feta Cheese
1 Tsp Minced Garlic

Vinaigrette Dressing:

1 Tbsp Crumbled Bacon
3 Tbsp Olive Oil
2 Tbsp White Vinegar
1/2 Tsp Salt
1/2 Tsp Pepper
Squeeze of Fresh Lemon

Instructions:

Vinaigrette - Place all ingredients in a lidded jar or container and shake vigorously for one minute.

Salad - Cut tomatoes into quarters. Slice cucumber to 1/4 inch thick slices. Cut onion in half and finely slice. Add all ingredients to a bowl and toss. Top with vinaigrette dressing.
