Ingredients :
-Italian bread with garlic butter(2 slices)
-EVOO 2 tablespoons
-eggs scrambled (3)
-hot peppers diced and sautéed (2)
-marinara sauce (4oz.)
-shredded mozzarella (4oz)
-salt and pepper to taste
-fresh chopped parsley

-heat sauté pan with EVOO over medium heat.when hot add eggs,using spatula to keep sides loose
-when eggs are firm add hot peppers,salt and pepper to taste
-add cheese,cover with lid until cheese melts
-fold eggs into a half moon shape and place on garlic toast
-top with garlic toast,garnish with parsley and marinara

-crumbled Italian sausage or bacon is an excellent addition to this sandwich. Serve with roasted redskin potatoes
