1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
4 tablespoons mascarpone cheese
1 teaspoon vanilla sugar
1/3 cup walnuts, toasted and chopped
6 ounces mascarpone
¼ cup powdered sugar
1 teaspoon vanilla extract
Set oven to 350 degrees F. Butter and line a 9 x 5 x 3 inch loaf pan with parchment paper.
Sift together the flour, baking powder, baking soda, cinnamon and salt. Beat sugar, vanilla sugar, butter and eggs until light and fluffy, about 10 minutes. Add mashed bananas and mascarpone. Fold in dry ingredients and nuts.
Pour batter into prepared pan and bake 1 hour, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely. In the bowl of an electric mixer mix together mascarpone, powdered sugar and vanilla extract until creamy. Using a spatula, spread frosting evenly over the bread and serve.
