Looking to cook something for mom? Dave Chudowsky's daughters share their recipe for a special Mother's Day soup

It's a cozy meal the whole family can enjoy and make together.

CLEVELAND — It’s going to be a different kind of Mother’s Day as we continue to maintain physical distancing and follow stay-at-home orders into yet another weekend.

Getting something for mom is certainly important, but for the Chudowsky sisters spending time with their mom is extra special. So, this week Brooklyn and London are sharing a special recipe. 

Chudowsky’s wife, Lindsay, and the girls spent some time in the kitchen making one of the family’s favorite meals: Kale and potato with Italian sausage soup.  

Brooklyn says: “Oh, I love it. I once had three bowls.”

London says: “I actually don’t like it. I love it!”

Kale and potato with Italian sausage soup recipe:

INGREDIENTS:

Package of Italian sausage

8 cups ½ batch kale, stems removed, leaves shredded

1 tsp olive oil

1 onion, chopped

1 medium carrot, sliced

4 cloves garlic, chopped

8 cups chicken broth

2 cups water

Potatoes, 3 or more medium-sized, peeled and diced into ¼ inch pieces.

1 pinch dried red pepper flakes

¼ tsp fresh ground pepper

Salt to taste

INSTRUCTIONS:

In a large Dutch oven or pot, cook sausage over medium-low heat until browned, about 10 minutes.

Remove from pot, let cool and cut into thin slices.

Add oil, onions and carrots; cook on medium until soft, about five minutes. Add garlic and cook one minute more.

Add broth, water, black pepper, sausage, potatoes, red pepper flakes and bring to a boil.

Add mozzarella cheese on top if desired.
