Ah, comfort food.
In honor of National Comfort Food Day, our own Hollie Strano is sharing her favorite comfort food recipe.
CHICKEN BROCCOLI CASSEROLE
One large head of broccoli, cooked and chopped into bite sized florets. Set aside.
4 boneless chicken breasts, cooked. In a large skillet, melt 1 stick of butter and add chicken breast and cook through, seasoning with salt and pepper. Remove chicken once it’s cooked thoroughly and chop into bite-size chunks. Set aside.
In a large bowl, combine:
One can of cream of broccoli soup
One can of broccoli cheese soup
One can of cream of celery soup
One and a half cups of mayonnaise
One soup can of skim milk
One cup of shredded cheddar cheese
Add the cut, cooked chicken and drippings from pan.
In the same skillet, melt a tablespoon of butter, turn off the heat and add 1/2 cup of breadcrumbs. Toss until they are completely coated. Set side.
To assemble, usea large, rectangular glass, casserole dish. Place the cooked, drained broccoli on the bottom. Top evenly with the soup and chicken mixture. Sprinkle with an additional cup of shredded cheddar cheese and the bread crumbs coated with butter.
Bake at 350° uncovered for about 45 minutes or until bubbly and thoroughly cooked through.
Serve on top of white rice. I usually cook about 4 cups for my family.
