It's no secret, our WKYC News Crew loves to eat. And we especially love to eat TREATS!

One of our editors, Pat, is quite possibly the best "cookie cooker" ever! He makes many varieties through out the year, but every autumn we get to have a special treat. (See recipe below.)

He brought a tray in for the late news crew - how we managed not to eat any is amazing. Okay, the truth is that we had a tray in the newsroom and a second tray was HIDDEN from us until news time. Go figure.

Celebrating National Cookie Day with Pat's Delights!
It was National Cookie Day on Tuesday, and Al, Russ and Betsy couldn't wait to celebrate with (one of our editors...) Pat's "Ridiculously Good Pumpkin Cookies".

Pat’s Pumpkin Cookies with Cream Cheese Icing

Ingredients:

Cookies:

-1 cup sugar

-1 cup butter

-1 egg

-2 teaspoons vanilla

-1 cup canned pumpkin (I like a little extra)

-2 ½ cups flour

-2 teaspoon baking powder

-1 teaspoon baking soda

Cream sugar and butter. Add egg and vanilla. Combine and add flour, baking powder and baking soda. Mix well. Drop by spoonfuls on cookie sheet and bake at 350 degrees for 13-15 minutes. Cool on wire rack.

Icing:

-1 cup unsalted butter

-8 ounces cream cheese at room temperature

-1 pound confectioners sugar

-1 teaspoon vanilla

-1/8 teaspoon salt

Combine butter and cream cheese. Add confectioners sugar, vanilla and salt. Mix well and spread on cooled cookies.
