How to make potato latkes with Erica Rivera

On Friday's Lunch Break with Jay Crawford, Erica guest hosts and shares her family recipe for the traditional Hanukkah dish.

CLEVELAND — On Lunch Break with Jay Crawford on Friday, guest host Erica Rivera shared a taste of her family's Hanukkah tradition with Jay.

Erica brought in a plate of potato latkes, and showed us how to prepare our own from scratch at home, just like she does for her husband, radio and talk show personality Geraldo Rivera.

Ingredients

  • 2 cups of potatoes
  • 2 eggs
  • 1 small onion
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup flour
  • 1/4 tsp baking powder
  • oil

Instructions

Wash potatoes. Put onion, eggs, salt and pepper in blender. Add 1 cup of potatoes and turn blender on high. Then add flour and the rest of the potatoes. 

Put the potato mix on a hot skillet with oil, in dollops that measure about the size of a small pancake. Brown on each side. Serve.
