'Etalian' in Chagrin Falls goes small and simple to grow business

The new pizza shop is currently under construction and hopes to open in the next month.

CHAGRIN FALLS, Ohio — Restaurateur, Eddie Tancredi doesn't mind mixing things up. The former owner of Distill Table in Lakewood is now opening a new venture after Distill Table closed last March. 

His new restaurant is called Etalian and is located on Bell Street in Chagrin Falls. 

While it's still under construction, Eddie is looking to make Etalian the fast casual go to spot for pizza.

"Here I'm just focused on one thing," said Tancredi. "What I'm trying to achieve is the best possible product and that's with our pizza." 

Putting all of his energy into one product and focusing on making the dining experience easy for the customer with multiple ways to order. 

"Ease of convenience for how the guests can order with multiple ways to order from the register from your table, a kiosk and also our online app." 

A shift to fast casual dining molded by the pandemic. 

"A lot of things we were struggling with just got worse," he said. 

Things like cost of ingredients sky rocketing. 

"We already had problems keeping our margins," he said. "Beef prices are up, chicken wing prices are up." 

Struggles also include a lacking work force. 

"It was already hard to keep staff. Labor is, as we all know, an issue right now." 

By limiting cost of ingredients and not relying on a large staff, Eddie believes the small and simplistic approach to business will ultimately end up growing his in the future.
